潮汕做法:蛇剥皮, 从颈部下刀, 分两次,左右两片将肉撕下。皮、 骨砍段煮汤, 肉用刀背剁过, 切片, 拌油。 汤好时涮空心菜和蛇肉, 肉蘸酱(以普宁豆酱为底加工而成),美味无比。
